Beans dijonnaise

Ingredients

  • 2 tbs Maille Mayonnaise with Dijon Mustard

  • 1 tsp Maille Hot Dijon Mustard

  • 1 tsp Maille White Wine Vinegar

  • 1 tsp Sunflower oil

  • 2 lbs Green beans

  • 2 lbs Yellow beans

  • 1 bouquet Chives

  • 1 bouquet Parsley

  • Black pepper

Instructions

  1. Start preparing your beans by cutting off the stem on one side.

  2. Blanch the beans for 3 minutes in a pot of boiling water. You want the beans to remain crunchy.

  3. Drain the cooked beans and place them into an ice bath until they have cooled down.

  4. Drain once more and thoroughly dry them.

  5. Slice your beans in half lengthwise and add them to a large bowl.

  6. In another bowl, start combining all your ingredients for the vinaigrette and mix well.

  7. Once your vinaigrette complete, mix in with your crunchy beans.

  8. Top with chopped chives, parsley, and season with black pepper
