Preheat the oven to 350o.
Using a spoon, transfer the old-fashioned Maille mustard to a flat-bottomed bowl. Add the chips and stir quickly but gently. The chips should not be saturated with mustard. Each chip should be covered with a sprinkle.
Spread the chips in a single layer on a non-stick baking sheet (preferably a silicone mat).
Cook, stirring once, for about 4 minutes, then broil over low heat for 2 minutes. Watch carefully to prevent the chips from burning!
Let cool and serve within 24 hours.
